FRESH BBQ Favorites

Pulled Pork Plate
Our signature sandwich.
I take Pork Butts and slather them with my secret spice rub. I then smoke low and slow for no less than 12 hours! I will serve fresh from my smoker with a beautiful bark, falling off of the bone tender! 

Smoked Sliced Beef Brisket
I smoke my Beef Brisket Texas style low and slow. Just tender enough to slice for sandwiches, not shredded.

Smoked Sausage Links
The sausage has a slight spicy kick. I will smoke for a short time on smoker, then grille before serving. Allowing the sausage to burst open and release the juices!

Whole Smoked Chickens
Smoked slow and low. Very tasty and juicy! If you have only special pieces you like from this yard bird ask me, we should be able to assist you!

Whole Baked Chickens
I slow cook these rotisserie style, juicy and full of flavor!  (No smoke)

  Pork Spare Ribs
I take a full slab of Pork ribs, season generously w/my spice rub made just for ribs. I do not cut off the skirt-so you get the entire rib! After smoking for a few hours, I will grill them and coat with one of our homemade BBQ sauces! Please let me know which you prefer! I serve my ribs w/a 'chewy/tender' texture.

Baby Back Ribs
Prepared same as Spare Ribs!

Smoked Whole Turkey
Well...that's what it is.

Prime Rib bone on
Just about any size you desire. These are served rare end to end. If you have folks that prefer more well done pieces, we offer Au Jus heated to help turn the meat a little more brown to their liking!

Smoked Phatties
Well seasoned pork sausage rolls with cheese stuffed smoked jalapeno's inside. (Minimum 3 please)

Cajun Seafood Boil
We boil our special spicy seasonings all together with Onions, Garlic, Whole potatoes, Corn on the Cob, Sausage and Gulf fresh Shrimp for this
 wonderful feast!  #
 We will then serve your feast family style on large tables covered with newspaper! Butter, Cocktail sauce and bread included!

#We may substitute Gulf Shrimp for local shrimp if desired. This is less expensive but shrimp is not as tasteful.

Freshness

We prepare our food fresh with each job and from scratch.
 Kathy shreds the coleslaw, the beans we cook from dry stage, potatoes are not instant, meats are cooked fresh to order, The bread pudding is made to order! No canned beans or pre made slaws here. 

For all CATER jobs-we prepare all items fresh to order! 

Our prices may not be lowest, but the quality, taste and love that go in our foods are always HIGHEST!
